Apples kept at room temperature ripened ten times faster than refrigerated. Large quantity should be kept in a cool storage between 0 and 4ºC . To keep the humidity, cover the apples with perforated plastic sheets. They can be frozen in cubes, chunks or slices but never as a whole apple.
